2 small pita breads that have been torn into small peices.
1 large English cucumber that is finely diced .
1/2 onion finely diced.
3/4 cup of chopped Italian parsley.
3 cups of halved grapes tomatoes.
2 tablespoons of extra-virgin olive oil.
3/4 fresh mint (chopped).
1 clove garlic (crushed).
1tablespoon of lemon juice.
ground sumac.
crumbled sheep-milk feta cheese.
freshly ground black pepper and kosher salt.

- preheat the vegetable oil in a large skillet over medium-high heat .
- place pita bread pieces into the skillet but without crowding and fry until golden brown and blot dry with paper towels.
